Cooking Fun With My Kid

My 4 year old LOVES pancakes.   He LOVES them with chocolate chips in them.  Today we made pancakes together.  I used Hungry Jack pancake mix. 1 1/2 cups pancake mix, 1 cup juice, milk or water.

Mixing it all togetherGetting ready to taste it

Just a few chocolate chips

Technique Question

I was asked recently "I was watching food network when someone cooking a roast seared the roast in a pan before baking. Why would they do that?" -Randy from Reston, VA

I sometimes sear my roast first; sometimes I don't.  A pork roast, I don't.  I put the fat side up so it is self-basting. You can sear a roast as it gives it great color and seals in the juices to keep the roast moist. There are many cooks who do not sear before roasting.  Some use a rub on it to give it added flavor and moistness.

You should always let a roast rest before slicing it as well.
