Eclair Cake


2 (3.5 ounce) packages instant french vanilla or cheesecake pudding mix
3 cups milk
1 (8 ounce) container frozen whipped topping, thawed
1 (16 ounce) package graham cracker squares
1 (16 ounce) package prepared chocolate frosting

Directions

  1. In a medium bowl, thoroughly blend the pudding mix and milk.
  2. Fold in Cool Whip.
  3. Arrange a single layer of graham cracker squares in the bottom of a 13x9 inch baking pan. 
  4. Evenly spread half of the pudding mixture over the crackers. 
  5. Top with another layer of crackers and the remaining pudding mixture. 
  6. Top with a final layer of graham crackers.
  7. Spread the frosting over the whole cake up to the edges of the pan. 
  8. Cover, and chill at least 4 hours before serving.

Oatmeal muffins

1 cup quick-cooking oats
1 cup buttermilk
1 egg, beaten
1/2 cup packed brown sugar
1/4 cup vegetable oil
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Directions

  1. In a bowl, soak oats in buttermilk for 15 minutes.
  2. Stir in egg, sugar and oil.
  3. Combine flour, baking powder, baking soda and salt; stir into oat mixture just until moistened. 
  4. Fill greased or paper-lined muffin cups three-quarters full.
  5. Bake at 400 degrees F for 16-18 minutes or until muffins test done.
  6. Cool in pan 5 minutes before removing to a wire rack.



Smothered Pork Chops

4 pork chops marinated in Sesame Ginger Marinade

Breading
1 cup Italian Bread Crumbs
1 /4 cup dried chopped onion
1 tsp (approx) Johnny Seasoning Salt (or other seasoning salt)

Place breading on plate and add still wet pork chops one at a time to breading and press each side to get breading to stick. Once breaded leave on plate for approximately 30 minutes to get to room temperature.

Topping
1 med onion chopped (medium sized pieces)
1 Tblspn butter
1/4 cup apple juice
1 Tblspn maple syrup
1 apple cored sliced (medium slices)
1/3 cup cream cheese

While waiting for pork chops melt butter in frying or sauté pan add onion and apples. Continue to fry until onions are translucent and apples softened. (I like my onions browned) Add apple juice, and maple syrup mix until coated and remove from heat. Add cream cheese and stir until smooth. Cover with lid or tin foil.


Whatever you plan on "frying" your chops on or in needs to be relatively hot the warmer side of medium heat. I stream a little bit of olive oil on it and spread to coat (on a flat griddle I use non stick spatula)..in a pan you can turn the pan until it's distributed.

Put the pork chops on the surface and cook for 6 minutes and carefully turn over to the other side. As hard as it is to wait, it is best to not checking the breading when it's frying more than just the edge. I used a box of stuffing and some frozen corn to complete the mea

Navy Bean Soup


3 cans white beans, rinsed
1 can diced tomato with juice
1 carrot diced
1 medium onion, diced
1 tablespoon minced garlic
1/2 smoked kielbasa (I used turkey kielbasa) sliced and quartered
4 cups of water


add beans, and tomatoes to crock pot. Saute carrot, onion, garlic & kielbasa in a little olive oil. Add to crock pot and mix...Add 4 cups of water.  Cook on low heat until carrots are tender.


To serve, add croutons and some shredded cheese.
