Potato Crusted Fried Chicken

This is a total off the cuff recipe

I used approximately 1 pound of chicken tenders
I patted dry before dipping in a mixture of sour cream, Dijon mustard and a splash of white white..(about 1/2 cup sour cream, 1/4 cup Dijon and splash of wine)

I mixed together plain bread crumbs, potato flakes, dried onion flakes and my favorite seasonings.  After dipping the chicken I tossed to cover the chicken with the potato flakes mixture.  I let it sit for about 10 minutes and then fried in a 350 degree deep fat fryer.  YUM!.  If you have questions, please ask!!
